Simple Pound Cake

I’m busy collecting a gaggle of simple recipes that you can adjust and alter to make all sorts of great things. And right now, I seem to be in desert mode! Still looking for a good basic cookie recipe… one that works with whatever add in that you have around. But I think I’ve found a great one for pound cake. A great use of extra home fresh eggs and your own jams!

POUND CAKE

1 cup of butter, room temperature
1 1/4 cup of white sugar
1 teaspoon of vanilla (or whatever flavoring you’d like!)
4 eggs
1/2 teaspoon of baking soda
1/2 teaspoon of salt
2 cups of flour

Preheat oven to 325 degrees.

Cream the butter and slowly add in the sugar while stirring. Add the flavoring (vanilla) and stir. Add eggs one at a time, stirring them in before you add another. (If you’re using a mixer, don’t whip them up too much, just stir and get them incorporated before you add another.) Then add the soda and salt and the flour. Stir the flour in a cup at a time. Pour into a greased loaf pan, bake an hour or until done.

Serve with a dollop of homemade jam or jelly for an extra special treat. Fresh fruit would be delightful! You can also stir in chocolate chips or nuts it you wish, that apparently turns out yummy. This is one of those recipes that you can fiddle with and see what works best! I love those the best!

Don’t Forget the Library…

I don’t know about you, but I tend to forget about the library at times. We’ll go for a stretch and just kind of forget to go. And then I find myself and the girls buying more books and all. And then I remember… THE LIBRARY! My gosh they have a lot of stuff now adays… cds and dvds and books, etc. And I don’t know about your libraries, but ours are pretty current. I found books on green living, homesteading and even postive thinking and vision boards! And we got a handful out for Maggie to suppliment her school reading and the girls both found Anime books and other goodies. And it’s all free. How can you beat that?

So, don’t forget to visit the library! It’s a fun way to save a ton of cash and also be green, and to learn more and entertain yourself without resorting to the tv or video games!
