Both my kids are sick.
I’m not yet, so I’m kinda happy about that. I hope it holds off until like next Thursday because we got a gig on Saturday and on Wednesday and that will make it hard to sing and all that.
Since I had some sick kids, some garden carrots and some onion and of course, noodles and chicken… I thought, a big pot of thick homemade chicken noodle soup would be the perfect thing for them.
Chopped up all the carrot harvest. Yeah, they were pretty little. But then, it was easy to cut them up. Just trimmed off the tops and bottom and into the pot! Easy! Chopped up two onions kinda fine. My kids are not huge onion fans, but they do like the flavor in soups and such, so I just chop them pretty fine and that works out good.
We love this roast chicken soup base from the restaurant supply company. It’s not that expensive and it’s a great flavor, quick. I just filled up the pot with water, carrots and onions. And of course a couple big spoonfuls of our frozen chicken chunks ready to go into anything. And then I added 3 or 4 big tablespoons of the soup base. I really don’t remember how much. You know, this was such an easy soup to make, and I didn’t measure anything. Just through in enough carrots and onion and chicken, probably about a 1/4 a cup of base? And filled the pot to about 3/4 full of water and set it to simmering for an hour or two.
I put a big pinch or two of course salt in there as well as a good dash or three of garlic powder. Once everyone was smelling the great aroma and all, I dumped half a bag of Amish thin egg noodles in there and gave it another oh 20 minutes or so, till everything was good and cooked. It was awesome. And those kids ate it up. I got only one bowl. But that’s okay, because with a couple doses of hot hot homemade chicken noodle soup in them, and some nice long naps and of course a shot or two of Nyquil, they were feeling better in a couple days.
Of course, Jack and Luna were not interested in dumb old soup.
Even if it did smell like chickens… and veggies…. and nooooodles….
Well, Jack was worried that perhaps it would not be suitable for humans to eat and he would be willing to put his life on the line and test it for me.
He’s like that.
But in the end, they were willing to patiently wait, just in case, you never know, there might be something left for them to sample. Just a wee bit. Of course, they were also protecting it, since I had set it down by my laptop and left to get my camera and I come back and they are BOTH sitting there trying to be very nonchalant… hahaha…. silly kitties.
